2 tomatoes, peeled, seeded and diced
1 Lebanese cucumber, seeds removed and diced
6 spring onions, chopped
1/2 big bunch parsley, stems and leaves chopped
1 small handful mint leaves, chopped
1 garlic clove, finely chopped
juice of 1/2 – 1 lemon depending on your taste
spray of olive oil
Soak the bulgar in a bowl with enough water to cover for at least 1 hour. Squeeze out the excess water and add all the other ingredients, mixing well.
I served this with marinated chicken and it was really yum. A nice marinade could be a combo of chillies, thyme, garlic, crushed coriander seeds, crushed cumin seeds, crushed peppercorns, lemon juice, olive oil and salt. Char-grilled lamb is also a good combo and you could marinate that for some extra flavour too.
Next time I might include a red or green chili in the tabouleh and maybe add some feta too. It’s also nice to serve with Greek yoghurt mixed with garlic, cucumber, salt, pepper, mint, parsley, dill and maybe a green chili in there too if you’re feeling up to it.
I have always thought that when it comes to taking care of your skin, half the battle is keeping a daily routine and the other is using a great product. About two years ago my friends told me that the face cream I’d been using contained potentially carcinogenic ingredients. Since then I’ve been searching for a moisturiser that feels as nice on my skin as the old one did. I’ve tried many different brands and have finally stumbled on one that feels as good as my old fave without the potential carcinogen issue.
I started using Heal Gel about 6 months ago and it makes my skin feel great. It’s light, non greasy and easily absorbed. If you’re looking for a new moisturiser I’d really recommend it.

My trainer said this was an easy one today. She was a little disappointed that my abs were not in agony after yesterday and told me to focus on using those muscles more. I have a feeling they will be hurting tomorrow.

Stavroula’s Stuffed Red Capsicums from Kylie Kwong’s book “It Tastes Better”. These tasted great, the filling was super yummy and tasted fab on its own. The tops get a little charred during the roasting process but the capsicums are juicy and really sweet. I used 1/2 cup brown rice instead of what she recommended to lessen the carbs and I don’t think the dish really needed all the rice she used anyway. As usual, a spray of olive oil was all I used on the peppers and filling to hold back on the fat.
I paired the capsicums with a rocket, mint, parsley, spring onion, cucumber, cherry tomato and feta (30g) salad with a few marjoram sprigs and a grind of pepper. It went really well.
Enjoy this workout, I really liked it. Make sure you have enough resistance on your bar to make it worthwhile. 🙂

6.5km Map My Run today. The gorgeous weather meant Wynyard Quarter was the busiest I’ve seen it in quite a while. There were even boats sailing happily on the harbour. Great day for it.
Even though I grew up riding, it’s been a long time since I was in the saddle. Eight years to be exact. I’ve been wanting to get back in to it but never knew where to go until a friend told me about the Helensville Riding School. I had my first lesson and absolutely loved it. Thomas was so placid and well behaved it was easy to concentrate on what I was learning without having to worry about his temperament. In my first lesson I learnt to correct my posture during trotting, better hand control, to move sideways by squeezing Thomas with one leg and to pivot 180° with his front hooves staying in the same spot. I had the best time and have booked another lesson for next week. I can’t wait to update what I’ve learnt each time and I seem to be getting a great leg workout to boot.
